The best part about each of these meals? They’re all “make-ahead” recipes — meaning you do the heavy lifting the night before so all you have to do on Mother’s Day is pop them in the oven and/or serve!

EASY Mother’s Day Brunch Recipe #1: Mixed Berry French Toast Bake

This recipe is literally as simple as throwing all of the ingredients in a bowl, mixing them up, pouring them into a baking dish that you’ll let sit — and then baking it at 350°F for 30 minutes.

It’s also full of ingredients you probably already have in your kitchen — and there’s room for your imagination to run free with in terms of the kind of bread and berries you’ll use.

Pro Tip: Because you can make this dish ahead and freeze it — this is an awesome recipe to double, pop in your freezer, and keep on hand to deliver to a friend in her precious postpartum days. We love bringing this recipe and one of our Dear Son or Dear Daughter journals  to the new moms in our life!


EASY Mother’s Day Brunch Recipe #2: Overnight Maple Raisin Steel Cut Oatmeal

When it comes to make-ahead meals — this one honestly couldn’t be simpler. You can choose to make this using one of three methods — double-boiler, crocktop, or stove-top — but we love the crockpot method best because it’s so straightforward.

This recipe is a total crowd pleaser to include in your Mother’s Day Brunch spread — especially if you use it as part of an oatmeal bar with a variety of “choose your own” toppings.

Some of our favorite toppings to include when we serve this? Berries, sliced bananas, drizzled honey, slivered almonds (or really any kind of nut!), brown sugar, and extra raisins!


EASY Mother’s Day Brunch Recipe #2: Make-Ahead Baked Greek Omelet

If you’re going for, “this looks fancy but really took all of 15-minutes to prep and assemble” — this one’s for you. This Greek-inspired omelet bake screams sophistication — but it doesn’t require much fuss in the kitchen. It’s filled with the kinds of veggies you’d find in your favorite Greek salad — and the best part?


The feta. Lots and lots of feta.


Maybe we’re biased, or maybe the flavors just  take us back to Greece (one of our favorite places to write about in our Travel Journal!) — but this one takes the cake for us!
